Egg Salad Sandwich

Ingredients :

Egg Base:

  • large eggs, hard-boiled & chopped
  • ¼ cup mayonnaise (plus more to taste)
  • 1 tsp Dijon mustard (or yellow mustard)
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Pinch of paprika (smoked or sweet)
  • Salt + pepper to taste

Optional Boosts:

  • 2 tbsp fresh dill/chives, chopped
  • 1 stalk celery, finely diced
  • 1 tbsp pickle relish

For Serving:

  • Bread (sourdough, croissants, or rye)
  • Lettuce, tomato, or sprouts

Instructions : 

  1. Cook Eggs: Hard-boil eggs (use egg  cooker for foolproof results). Cool, peel, chop with slicer.
  2. Mix Salad: Gently fold eggs, mayo, mustard, spices, and herbs. Avoid overmixing!
  3. Season: Add salt, pepper, and paprika. Taste and adjust.
  4. Assemble: Layer onto bread with lettuce/tomato. Pro tip: Toast bread in panini press for crunch!
